Black Cherry Porridge Bowl

This porridge bowl is made with blended oats and nuts along with frozen cherries that have been defrosted and then topped with ground pistachios for some extra texture. I’ve kept the ingredients simple for a quick go-to breakfast. If you’ve made too much porridge you can refrigerate it and re-heat it the following day.

Nourishing and filling

You’ll be satisfied right up until your next meal with this porridge bowl. It’s made with blended nuts so this gives you extra protein and fats for a more satisfying breakfast. The toppings can be modified to suit your taste and what you might already have in. Instead of black cherries you could use frozen strawberries and just prepare them the same way. Or slice up some fresh banana with a spoon of chia jam. Chia jam has a lot less sugar than jam and is thickened with chia seeds which have lots of health benefits too. Plan ahead

You can plan ahead for the week making mornings that bit more easy. Simply double the quantities of this recipe then your breakfasts are sorted for the next few days. You don’t have to have the same each day, you can vary your toppings, add some banana or other fresh fruits. You can also use the nut and oat blend in smoothies too. Just add a couple of spoonfuls to add a creamy texture to your smoothie. Try stirring through some sultanas into the oat blend the night before then eat chilled the next day topped with grated apple and a squeeze of lemon. Black Cherry Porridge Bowl

A nourishing porridge bowl made with mixed nuts and oats blended together which makes this breakfast extra creamy. Top with your favourite fruits or go for these black cherries & pistachios.

Ingredients

  • 80g Oats
  • 75g Mixed Nuts
  • 240ml Milk Oat, Soya, Nut milk
  • 30g Pistachios
  • 150g Frozen Cherries
  • 2 tsp Maple Syrup
  • 1 tsp Cinnamon

Instructions

  • Take your cherries out of the freezer and leave in a bowl to defrost while you prepare the porridge.
  • Blend your oats and nuts then heat in a saucepan with the plant milk and cinnamon. Gently simmer for up to 10 minutes occasionally stirring, you might want to add a dash of water for your desired consistency.
  • Pulse your pistachios once or twice in the blender. Once your porridge is cooked, ladle it out into your bowls then spoon over the cherries along with the juice. Alternatively you can stir the cherries through the porridge. Sprinkle over the pistachios and drizzle the maple syrup and enjoy!
