Vine Roasted Tomatoes with Garlic & Cumin Seeds

This recipe celebrates tomatoes by simply roasting them in olive oil with a few spices. Once they’ve blistered and started to brown, their juices will have mixed with the olive oil to create a delicious sauce for you to soak up with some crusty bread. The herb pesto goes really well with this recipe. You can also use these spiced roasted tomatoes in other recipes such as making a pasta sauce out of them, adding to a curry, or making a roasted tomato soup.

Spiced Roasted Tomatoes

This recipe celebrates tomatoes by simply roasting them in olive oil with a few spices. Delicious served with crusty bread to mop up the juices.

Ingredients

  • 300g Cherry Tomatoes on the vine if possible
  • 1 tsp Cumin Seeds
  • 1 tsp Coriander Seeds
  • 3 Garlic Cloves sliced
  • 3 tbsp Olive Oil
  • ½ tsp Faked Sea Salt
  • Freshly Ground Black Pepper
  • 6 Basil Leaves for garnishing
  • Baguette to serve 

Instructions

  • Preheat the oven to 200C.
  • Place the tomatoes in a baking dish just big enough so they’re tightly packed. Combine everything except the basil in the dish, ensuring the tomatoes are coated in the spices and olive oil.
  • Place the dish in the oven for 20 minutes until the tomatoes start to blister, then for the last 10 minutes turn on the grill and let them brown.
  • Serve with fresh basil and warm crusty bread to mop up the juices. A spoonful of the herb pesto on the side works really well too
