Rich and flavoursome Mushrooms on Toast
Mushrooms on Toast are a classic breakfast or quick dinner choice. There are so many variations on how they can be prepared and everyone’s probably got their own special take. I’ve made these umami-rich mushrooms by slicing them fairly thickly as to keep a bite to them. Then I’ve gently heated them with soy sauce and a spoonful of some Mushroom SuperBlend powder. I’ve cooked the mushrooms over a low heat until the liquid has come out of them. It’s best to do this with a lid on your pan. The mushroom juices then blend with the soy sauce and Mushroom SuperBlend to create a flavoursome coating.

Use your favourite houmous to make it even more special
To make this dish even more special and full of flavour, I’ve used a sourdough seeded bread for the toast. Then instead of butter, I’ve used my favourite humous to spread a generous spoonful over the toast. Pile up your mushrooms then finish with chopped chives and a little salt & pepper. I’ve made some crispy kale to serve with mine but the mushrooms on toast are tasty enough on their own!
What else can you have these mushrooms with
These rich mushrooms you’ve prepared can be used in a myriad of dishes. You can use them in a mushroom risotto, simply by stirring them through the rice. You can add them to a quiche, or they’d make for a delicious addition in a comforting pie. If you wanted to add something else to them, a few spring onions stirred through would be a nice fresh contrast to balance out the darker flavours.

The Ultimate Mushrooms on Toast
Ingredients
- 300g Chestnut Mushrooms Sliced thickly
- 1 tsp Olive oil
- 1 tbsp Soy Sauce
- 1 tbsp Naturya Mushroom Superblend
- 1 tbsp Chopped chives
- 4 tbsp Houmous
- Your choice of bread for toasting I used a seeded sourdough bloomer
Instructions
- Heat the oil in a pan then stir the mushrooms, soy sauce and Mushroom Superblend together over a medium heat. Pop the lid on and leave to cook for around 10 minutes, until the mushrooms have let off their juices and softened. You should have some rich coated mushrooms.
- Slice and toast your bread, spread the humours generously over the toast then spoon over your mushrooms. Sprinkle a few chives over the top then season with salt & pepper and enjoy!
