Vegan Ready Meals from Eat.Plnt

Looking to try some tasty vegan ready meals?

I was recently sent some vegan ready meals to try from Eat Plnt. They’re a plant-based ready meal company who sell via their website and Holland & Barrett. There’s a wide selection to choose from including paella, curries and pasta dishes. I was sent four dishes to try which were:

  • Moroccan Style Chickpea Pie
  • Cauliflower Biryani
  • Spaghetti with Aubergine Ragu
  • Thai Green Vegetable Curry

Each meal was packed with lots of flavour and a good portion for one. I added an extra here and there such as some rice with the curry, poppadoms with the biryani, garlic bread with the spaghetti and a side salad with the pie. Spaghetti with Aubergine Ragu

This was made with wholewheat spaghetti, which was nice and light (I find that white spaghetti can feel quite heavy). The hearty sauce is rich with mushrooms and aubergines. I made some quick garlic bread to serve with mine and mop up the leftover sauce. I also stirred a little chilli oil through from their recommendation which worked a treat.

Thai Green Vegetable Curry

This was probably my favourite! The sauce was lovely and rich from the coconut and fragrant with lemongrass, ginger and lime leaf. There was a variety of vegetables such as crunchy babycorn, sweet red peppers and green beans. I served mine with basmati rice and fresh lime to squeeze over the rice. However, I didn’t really need to add the rice as it was filling enough!

Cauliflower Biryani

A comforting spiced dish of basmati rice cooked in a fragrant sauce with vegetables such as cauliflower, aubergine and peppers. I served this with some poppadoms and lime pickle which is a (solid) recommendation on their packaging.

Moroccan Style Chickpea Pie

The pastry on this pie was so delicious, I’d love it if they sold it so I can make some recipes with it! The filling was made up of chickpeas cooked in a spiced tomato sauce with cumin, coriander, garlic and chilli. The apricots and sweet potato gave a sweetness to the pie. I served mine with a simple mixed leaf salad and a squeeze of lemon.
