Quick Houmous & Super Seed Crackers

Quick houmous with caramelised onions and seed crackers

This quick houmous serve with seed crackers is a wholesome tasty snack to make. The houmous is topped with caramelised onions and flavoured with coriander powder. The crackers are very simple to make with minimal ingredients involved. They have a good snap to them and are flavoured with a few dried herbs.

Homemade caramelised onion houmous

Houmous is my go-to spread or dip. Rather than making a plain houmous, I wanted to make one I don’t often have. I love the taste of sweet caramelised onions. However I’ve always found the shop bought caramelised onion houmous is too sweet and slightly artificial tasting. I thought I’d make my own version of it. Instead of blending the caramelised onions into the houmous, I’d simply leave them whole and just spoon them over the top. This way you’ve got the full flavour of the onions and they add a welcomed texture.

How to flavour your crackers

Crackers are great snack on, and I had lots of delicious milled seeds from Yum & Yay. I decided to make these crackers with the Nutty Milled Mixed Seeds & Nuts as the base of the cracker. I added a few dried herbs to add a little flavour. In this recipe I used dried oregano but dried mixed herbs, dried thyme, herbs de Provence or za’atar would all work.

What to top your crackers with

We had been growing microgreens – they’re the nutrient dense babies of a plant. We had radish, sunflower and pea microgreens which made an excellent topping. They balance the sweetness of the houmous with some fresh green flavours. However if you can’t find microgreens, rocket would be as delicious with its beautiful peppery addition.

Quick Houmous & Super Seed Crackers

This easy houmous recipe is flavoured with ground coriander and topped with sweet caramelised onions. It's delicious spread on these super seed crackers made with milled seeds and oregano.

Ingredients

Super Seed Crackers

  • 180g (1 packet) Yum & Yay mixed milled seeds
  • 140 ml Water
  • 3 tsp Dried oregano
  • 1 tsp Salt

Easy Houmous

  • 1 tsp Coriander seeds
  • 4 Small red onions Finely sliced
  • 2 Tins of chickpeas Drained
  • 1 tbsp Olive oil
  • 1 tbsp Tahini
  • 1 Lemon 

Instructions

Super Seed Crackers

  • Preheat the oven to 140°C and line a baking tray with baking paper.
  • Mix all of the ingredients together in until a sticky dough forms.
  • Spread the dough across the lined baking tray using the back of a spoon until roughly 3mm thick. Score into squares and bake for 40 minutes – until they’ve turned golden brown.
  • When you remove them from the oven, leave them to cool. Then cut them into squares where you’ve scored.
  • Enjoy with your homemade houmous and microgreens or rocket.

Easy Houmous

  • Heat the oil and fry the onions on a gentle heat for 15-20 minutes until soft.
  • Toast the coriander seeds in a pan on a low heat until aromatic then pound them in a pestle and mortar into a powder.
  • Blend the chickpeas, tahini, the juice of half a lemon and coriander powder until smooth. Season and taste, at this point you might want to add more lemon juice or seasoning depending on how you like your houmous. If it's a little stiff you can add a tablespoon of water and blend.
