Smoky Beans with Harissa and Easy Garlic Toast
These smoky beans are rich in flavour, especially with the spices that cut through from the harissa paste, plus they’re served with the easiest garlic toast ever! The garlic toast is simply made by rubbing a garlic clove over your toast before buttering. Then the saucy smoky beans are poured all over the top of your crunchy garlic toast, creating a medley of flavours and textures.
Perfect Pairings: Add Extra Toppings to Your Smoky Beans
If you want to add any extras, the beans pretty much go with anything. Some pan-fried cavolo nero topped with sliced fresh red pepper is a go-to. Or for something that bit extra, a fried egg on top of the beans, paired with a veggie sausage, and a few sliced mushrooms. Perfect if you have a long hike planned that you need to fuel up for.
This recipe uses butterbeans and cannellini beans, however you can opt for a different bean. The harissa paste is a basic recipe consisting of: a jar of roasted peppers, 3 tsp smoked paprika, 3 minced garlic cloves, and 1 tsp chilli flakes – all blended in a food processor until smooth. Alternatively, you can use shop-bought harissa paste. However the homemade version adds extra flavour and is a great fridge staple!
Smoky Beans and Garlic Toast
Ingredients
- 1 can of butterbeans
- 1 can of cannellini beans
- 2 tbsp harissa paste
- 2 tbsp tomato puree
- A dash of water
- 2 garlic cloves peeled
- Bread for toasting
- Butter
Instructions
- Drain the beans, then, over a medium heat in a lidded pot, stir the harissa paste and tomato puree through the beans. Add a dash of water to loosen up the mix. Let this heat to a gentle simmer with the lid on for 10 minutes. You might need to add a little more water to keep them saucy.
- Make your toast, then take a peeled garlic clove and rub it over the toast before buttering. Spoon over the warm smoky beans and serve as it is or with any additional sides.
