Smoky Beans and Garlic Toast

Rich smoky beans on flavoursome garlic toast making a delicious brunch idea.

Ingredients

  • 1 can of butterbeans
  • 1 can of cannellini beans 
  • 2 tbsp harissa paste 
  • 2 tbsp tomato puree 
  • A dash of water
  • 2 garlic cloves peeled
  • Bread for toasting
  • Butter

Instructions

  • Drain the beans, then, over a medium heat in a lidded pot, stir the harissa paste and tomato puree through the beans. Add a dash of water to loosen up the mix. Let this heat to a gentle simmer with the lid on for 10 minutes. You might need to add a little more water to keep them saucy.
  • Make your toast, then take a peeled garlic clove and rub it over the toast before buttering. Spoon over the warm smoky beans and serve as it is or with any additional sides.
