Smoky Beans and Garlic Toast
Rich smoky beans on flavoursome garlic toast making a delicious brunch idea.

Servings: 2 people
- 1 can of butterbeans
- 1 can of cannellini beans
- 2 tbsp harissa paste
- 2 tbsp tomato puree
- A dash of water
- 2 garlic cloves peeled
- Bread for toasting
- Butter
Drain the beans, then, over a medium heat in a lidded pot, stir the harissa paste and tomato puree through the beans. Add a dash of water to loosen up the mix. Let this heat to a gentle simmer with the lid on for 10 minutes. You might need to add a little more water to keep them saucy.
Make your toast, then take a peeled garlic clove and rub it over the toast before buttering. Spoon over the warm smoky beans and serve as it is or with any additional sides.
