Strawberries & Balsamic with Mint
The balsamic vinegar with fresh strawberries marry deliciously and finished with a hint of mint just lifts the flavours.

- 250g Strawberries hulled and quartered
- 1-2 tbsp Balsamic Vinegar
- 2 tbsp Maple Syrup
- Freshly Ground Black Pepper
- 10 Mint Leaves
- Oat Crème Fraîche or Cream to serve
In a bowl, stir the strawberries, 1 tablespoon of balsamic, the maple syrup and a couple of twists of the pepper mill. Taste to check the acidity and if you'd like a little more vinegar add a teaspoon or two. Let this sit for 10 minutes - the longer the better as the strawberries start to release their juices.
Finely chop your mint then serve the strawberries with either a spoon or two of dairy free crème fraîche or cream. Finish with a scattering of mint leaves and enjoy.
