Strawberries & Balsamic with Mint

The balsamic vinegar with fresh strawberries marry deliciously and finished with a hint of mint just lifts the flavours.

Ingredients

  • 250g Strawberries hulled and quartered
  • 1-2 tbsp Balsamic Vinegar
  • 2 tbsp Maple Syrup
  • Freshly Ground Black Pepper
  • 10 Mint Leaves 
  • Oat Crème Fraîche or Cream to serve

Instructions

  • In a bowl, stir the strawberries, 1 tablespoon of balsamic, the maple syrup and a couple of twists of the pepper mill. Taste to check the acidity and if you'd like a little more vinegar add a teaspoon or two. Let this sit for 10 minutes - the longer the better as the strawberries start to release their juices.
  • Finely chop your mint then serve the strawberries with either a spoon or two of dairy free crème fraîche or cream. Finish with a scattering of mint leaves and enjoy.
